So my tank gets to 20% endurance and then sits down to recoup back to 100%. Great. Except he will do this while fighting. Sit, mob hits him, stand, sit, mob hits him, stand, sit..... until the mercs kill the mob the tank continues to try and sit during a fight. Is there any thing I can do to prevent him from sitting during a fight?

Use a Rest/Respite downshit. I didn't have a chance to post mine last night, but will help with your endurance issues. I'll be sure to post them when I get done work in a few hours.
Changing MedCombat as Riot said will prevent the issue of sitting mid-combat.
