The story we have recently read aloud from notaddicted.com and many of the things said (after the story was written) seem to have brought about much talk about Pecan Pie. It would seem many here do not consider the pie to be a proper treat because the pie contains nuts.
We want those people to think of it a different way.
Pecan pie is named pecan pie and that is not fortunate. This pie does contain the pecan nut but that is truly a small part of the pie. The pie is REALLY a sweet thick custard that needs no cream. The most crazy thing is one could make a pecan pie and replace the pecan nuts with something else. We have done it ourselves and it is DELICIOUS. Truly the heeart of the pecan pie is not the nut, it is the sweet middle.
Imagine making yourself this recipe for a change:
For crust
1 1/3 cups all purpose flour
1 teaspoon sugar
1/4 teaspoon salt
1/3 cup chilled solid vegetable shortening, cut into small pieces
1/4 cup (1/2 stick) chilled unsalted butter, cut into small pieces
2 tablespoons (about) ice water
For filling
1 cup sugar
3 large eggs
1/2 cup light corn syrup
3 tablespoons unsalted butter, melted
2 teaspoons vanilla extract
1 3/4 cups chopped NILLA WAFERS
Make crust:
Mix first 3 ingredients in processor. Add shortening and butter; cut in using on/off turns until mixture resembles coarse meal. Blend in enough water to form moist clumps. Gather into ball; flatten into disk. Wrap in plastic; chill 1 hour.
Roll dough on floured work surface to 13-inch round. Transfer to 9-inch round cake pan with 1 1/2-inch-high sides. Trim to align with pan edges. Freeze 15 minutes.
Make filling:
Preheat oven to 350°F. Whisk first 5 ingredients in medium bowl to blend. Mix in 3/4 cup NILLA WAFERS. Pour into crust. Sprinkle with 1 cup NILLA WAFERS. Bake pie until set, about 1 hour 15 minutes. Transfer to rack; cool.
You have noticed that the word PECAN is missing for the word NILLA WAFERS. There is even very little call for pecan in the first place. We feel it could be called filling pie rather than pecan pie.
Do we call a dish of fried chicken the name 'Fried Salt'? No, we do not, but is there not salt in fried chicken? There is. It is unfair to call that dish Fried Salt as it is to call Pecan Pie by its accepted name.
Never allow a chance for a snack to please you to pass you by.
