@LamahHerder @toadwart @kaen01 and some others spend a ton of time talking about the delish options that are available to us in the wild world of tacos, and I wanted to share with you a really cheap and simple way of making some delish pork tacos.

I was tied up yesterday so i didn't get to have any, but sent these with my ex-wifey to a friend's house and they loved it
Pork shoulder (butt) is often really cheap, and often oferlooked. here you can see it was .99$ a pound.
keep in mind that the pork shoulder has the bone in it, so it takes a little bit of work, but it is amazing
Out of the package with my victorinox knife (i need to sharpen it)
great quality knives for cheap (like me!)
Cut the first big hunk just stright off following the bone
Pork especially the shoulder, is very fatty, this is good, however we want to trim off a lot of the thick base fat
I like getting as much meat off the bone as i can, so i can have extra for other food stuff (like while this is cooking i can cook up the little pieces =D)
This is all the stuff from the shoulder-bone - not including the giant piece we cut off at the start
This is an example of some of the fat i will trim off - its probably not even necessary, but this is how i do it.
You can see all the extra fat that is trimmed off
Now to the good stuff!
I've been enjoying this low carb (at least <1g per serving) red curry paste for all sorts of stuff. in this case we're using it as a top coat rub
Old not fancy, cheap crockpot ec-tunnel value: $0.23
I have ongoing gastro issues where I have nausea most of the time, so i eat ginger to help with that - it also adds a really nice subtle flavor most people won't recognize
Coat the meat in the paste, with some ginger
Once it was in the crockpot i decided on moar ginger
Low low low (come back tomorrow)
Extra bits for cooking now (or later)

Been cooking for like 12 hrs at this point - look at all that juice. Remember this was a "Dry" crockpot - nothing else added outside of the meat and the paste/ginger. that is all cooked fat.
Bout to take it out - doesn't *look* so great
with the power of sheer will (and yelling) I was able to get it out without it just crumbling into 1million pieces (so tender)
Poked it with a spatula and it falls apart
